Strawberry and Balsamic Cheese Cake
- 300g digestive biscuits
- 100g soft butter
- 400g mascarpone cheese
- 700g cream
- 200g sugar
- 5 gelatine leaves
- 200g strawberry coulis
- 70g Balsamic Reduction
Method
- Mix digestive biscuits with melted butter, press evenly and firmly into a cake tin, and leave in fridge to set.
- Mix ream, sugar, mascarpone until soft peaks.
- Heat gelatine until liquid.
- Fold coulis and gelatine until liquid and add to cake tin. Leave in fridge to set.
